That's only natural for Italian-born Serni. Collaborating with award-winning South Coast Master Winemaker Jon McPherson, he continues to add wine-friendly selections to the Vineyard Rose menus. Serni also makes the most of the freshest, locally grown ingredients for seasonal dishes, all of which showcase the Tuscan cooking style he grew up with. Where did his creative culinary talent take him after Tuscany? Turkey, Portugal and Four Seasons properties in the West Indies and India and more recently, at the Four Seasons Aviara in San Diego, California Bistro and, later, Vivace (voted best Italian restaurant in town year after year). Most recently, Serni was executive chef at the world famous Disneyland Hotel in Anaheim. After more than 20 years of cooking globally, Serni and his family now live locally in nearby Winchester.
